Our target is to develop a credible method for the authenticity control and geographical origin identification of agricultural products. This will provide them special characteristics like high competition abilities and subsequently higher added value (Protective Designation of Origin P.D.O., Protective Geographical Indication P.D.I., e.t.c.). The discrimination of similar agricultural products is based on the determination of stable isotopes ratio. Stable isotopes are of basic structural components of the total biochemical compounds (¹³C/¹²C, ¹⁵N/¹⁴N, ¹⁸O/¹⁶O, ³⁶S/³⁴S and ²Η/¹Η).
